Sautéed Kale, Sweet and Delicious!

Use this recipe to sauté any greens, from chard to spinach. Coconut oil and apple juice sweeten the kale, but feel free to use olive oil and your favorite stock or white wine as the steaming liquid.
Ingredients
  • 1 large bunch of kale (or other greens)
  • 2 Tbs coconut oil (or olive oil)
  • 2 cloves chopped garlic
  • 3 Tbs apple juice (or stock or white wine)
  • Salt and Pepper
Instructions
  1. Cut the stem of the chard leaves out and slice.
  2. Wash in cold water and drain.
  3. Heat coconut oil in a large skillet and add garlic.
  4. When the garlic is fragrant, add the kale.
  5. Add the apple juice, gently stir the kale.
  6. Cover with lid and let steam for 3-5 minutes, checking often.
  7. The kale is done when it is tender.
  8. Season with salt and pepper.
  9. Serve and enjoy.
