Maple, Nut, Banana Bread

- 1½ cup white whole wheat flour
- ¾ tsp baking soda
- ½ tsp salt
- 1 cup chopped walnuts (toasted)
- 2 very ripe bananas
- ¼ cup yogurt
- 2 eggs
- 6 Tbs melted butter
- ½ cup maple syrup
- 1 tsp vanilla extract
- 1 cup chocolate chips (optional)
- Preheat the oven to 350F
- Prepare bread pans or muffin pans by greasing or inserting liners.
- Melt the butter and allow to cool.
- Toast and chop the nuts.
- In a bowl combine the flour, baking soda, salt and nuts.
- In another bowl, mix the eggs (beaten), melted butter, yogurt, syrup and vanilla.
- Pour the wet mixture over the dry mixture and gently fold in to mix. Add chocolate chips, if using.
- Pour into prepared pans and put in the oven.
- Bake loaf for 45-60 minutes, mini-loaf for 25 minutes and muffins for 20. An inserted toothpick will come out clean when done.
