Maple, Nut, Banana Bread

Ingredients
  • 1½ cup white whole wheat flour
  • ¾ tsp baking soda
  • ½ tsp salt
  • 1 cup chopped walnuts (toasted)
  • 2 very ripe bananas
  • ¼ cup yogurt
  • 2 eggs
  • 6 Tbs melted butter
  • ½ cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup chocolate chips (optional)
Instructions
  1. Preheat the oven to 350F
  2. Prepare bread pans or muffin pans by greasing or inserting liners.
  3. Melt the butter and allow to cool.
  4. Toast and chop the nuts.
  5. In a bowl combine the flour, baking soda, salt and nuts.
  6. In another bowl, mix the eggs (beaten), melted butter, yogurt, syrup and vanilla.
  7. Pour the wet mixture over the dry mixture and gently fold in to mix. Add chocolate chips, if using.
  8. Pour into prepared pans and put in the oven.
  9. Bake loaf for 45-60 minutes, mini-loaf for 25 minutes and muffins for 20. An inserted toothpick will come out clean when done.
