Zucchini Chips

Have you had zucchini chips?  Well, then you probably haven’t experienced how delicately sweet summer squash is when you suck all the water out!  Sprinkle on a little salt, and you have nothing but veggie goodness to satisfy your craziest snack-attack.

Every gardener lets a few squashes get away from them, it’s a fact of summer.  The zucchini hide in the leaves and get too big, tough and seedy to be used for a gentle sauté.  These guys are perfect for making chips!

Zucchini Chips

The squash shrink down quite a bit when they get dehydrated, so start with some big guys.

Slice as thin as you can, or better yet, bust out the mandolin.  Slice them between 1/8 to a 1/4 of an inch.

Brush on a little olive oil and sprinkle with sea salt (though they are yummy naked, too!).  Let the dehydrator run until they are thin and crisp, about 12 hours.

Store the zucchini chips in an air-tight container, and munch away!
