We’ve been eating a lot of granola lately, and this maple granola is by far the best!  It actually tastes like crumbled up oatmeal cookies.  I’m not sure how it started, but somehow my kids got hooked on cereal.  I suspect the cereal addiction began as an easy answer to pre-dawn requests for breakfast, bleary-eyed and pouring from a box, before the coffee was done brewing or the sun was even up.  Even though we were buying the groovy organic cereals, it is still highly processed with lots of sugar.  My husband and I both have blood-sugar problems and can’t eat cereal, so why were we feeding it to our kids?  Time to break the cycle!  I’ve been weaning them off cereal by substituting homemade granola.  It is still a little sweet, but the ingredients are whole and healthy.  We pair it with some high protein Greek yogurt and everyone is happy.  And yes, it is excellent on ice cream!

Maple Granola with Coconut and Pecans

This granola is shockingly simple to make, so assemble your best helpers!

In a large bowl, mix together the oats, pecans, almonds, coconut, brown sugar and cinnamon.  In another bowl, combine the maple syrup and coconut oil (melted).  Pour liquid mixture into the bowl with the oats and nuts and stir until everything is well coated.  Sprinkle with salt.

Spread on a pan and bake low and slow at 250F for 1 hour and 15 minutes.  Every 15 minutes, stir the granola so that it browns evenly.

After it cools, store in an airtight container to keep it crisp and delicious.  I add raisons to individual portions, the crispy granola is way too good to have raison make it a little soft while being stored.

Recipe type: Breakfast
  • 3 cups rolled oats
  • 1 cup chopped pecans
  • 1 cup slivered almonds
  • ¾ cup shredded coconut
  • ¼ cup brown sugar
  • ¼ tsp groung cinnamon
  • ⅓ cup maple syrup
  • ¼ cup coconut oil (melted)
  • ½ tsp salt
  • 1 cup dried raisons (optional)
  1. Preheat the oven to 250F
  2. Combine oats, nuts, coconut, sugar and cinnamon in a large bowl,
  3. In a small bowl mix syrup and oil.
  4. Pour liquid over the dry mixture and stir until everything is well-coated. Sprinkle in the salt.
  5. Spread granola on a cookie sheet and bake in the oven for 1 hour and 15 minutes, or until golden brown. Stir every 15 minutes so the granola browns evenly. When cool, mix in the raisin and store in an airtight container.
