This apple walnut bread recipe is moist, flavorful and uses yogurt instead of butter or oil, what could be better than that?  Because this is a “quick bread”, it goes together in just a few minutes, so preparing the apples is the  only part that could be considered work.  To make it just a little more special, I drizzled salted caramel sauce over the top a few minutes after I pulled it from the oven.  Yes, I almost always have a jar of caramel sauce in the fridge, and so should you!

Apple Walnut Bread

You will need about 2 cups of chopped apples, it is your choice on whether or not to peel them.  I prefer to peel the apples, but it would be just as lovely with the skins on.  Chop the apples into small pieces, but not tiny, chunks of apple in the bread are wonderful.

This recipe makes 1 large loaf, but you could easily divide the batter into a few smaller loaf pans.  Prepare the pans by greasing them either with butter or an oil spray.

The caramel sauce drizzle is entirely optional, but it does make your friends say, “Oh, jeez, this topping is awesome!”  So, it’s up to you.

Ingredients
  • 1 cup vanilla yogurt
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp ground ginger
  • ½ tsp salt
  • 2 cups chopped apples
  • 1 cup chopped walnuts
  • Caramel sauce (optional)
Instructions
  1. Preheat oven to 375F and prepare loaf pan.
  2. Mix the first 4 ingredients.
  3. In a separate bowl, combine the flour, baking soda, baking powder, spices and salt.
  4. Mix the dry ingredients with the wet, stirring until just blended.
  5. Fold in the apples and half of the nuts.
  6. Pour into the loaf pan and sprinkle the remaining nuts over the top.
  7. Bake for 50-60 minutes.
  8. Remove from the oven and drizzle 2-3 Tbs of caramel sauce over the top of the loaf. After 10 minutes, remove from the pan to cool on a wire rack.
