Yes, healthy frosting does exist! Greek yogurt is a great alternative to using butter as a base for frosting. It is thick, creamy and has a wonderful tangy taste that can be enhanced by adding just a little honey, sugar and vanilla.
Healthy Frosting using Greek Yogurt
Start with about a cup of Greek yogurt. If you have time, let is sit in a strainer over a bowl in the refrigerator for at least an hour. This will drain off any extra liquid. Using a hand-held mixer, whip 3 Tbs of soften butter with 2 Tbs of honey and 2 Tbs of powdered sugar. Whip on “high” to completely blend. Add the yogurt and continue to blend until the butter and yogurt are emulsified and there are no more lumps (takes a little time). Add 1/2 tsp of vanilla if desired. Refrigerate until ready to use, this frosting will spoil if left out.
This healthier frosting is creamy, tangy and delicious! No guilt licking the bowl what-so-ever! It was perfect for a our king cake on Mardi Gras.
