These carrot muffins are a delicious treat around our house, they are packed with all kinds of healthy goodness and easy for the kids to help make.  The recipe is one from epicurious that I have tweaked over the years.  Muffin batter is great to play around with because it is so forgiving, you can switch around the ingredients to suit your taste and not really mess anything up.

My little guy and I were enjoying a special morning together, when he got the flour and sugar out saying, “make muffins, Mommy!”  He is starting preschool next week with his sister, so I was savoring our last morning before things start changing.

My carrot muffins are not only full of freshly grated carrots, but also apples, raisons, coconut, and walnuts… we enjoy them for breakfast and snacks all day until they’re gone!

After sifting the flour, baking soda, cinnamon, sugar and salt, stir in the shredded carrots, raisons, walnuts and coconut.

The crust is perfectly caramelized and the crumb is delicate and moist.

It helps if the eggs are room temperature when mixing with the melted coconut oil.
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • ¼ teaspoon salt
  • 1¼ cups coconut sugar (or regular sugar)
  • 2 cups grated carrots
  • ½ cup walnuts
  • ½ cup dried cranberries (or raisins)
  • ¼ cup sweetened flaked coconut
  • 3 large eggs, room temperature
  • 1 cup coconut oil
  • 2 teaspoons vanilla
  • 1 grated apple
  1. Preheat oven to 350F
  2. Sift together flour, baking soda, cinnamon, salt and sugar.
  3. Add carrots, walnuts, raisons and coconut.
  4. Melt coconut oil and add the room temperature eggs, mix well.
  5. Add grated apple and vanilla.
  6. Combine wet ingredients with dry ingredients and mix well.
  7. Spoon batter into prepared cupcake pans and bake 15-20 minutes.
