Perfect Bacon

When I need more than just a few pieces of bacon cooked, which is most of the time, I like to use the oven.  With 4 kids, my mom always used a roasting pan with a rack… which she learned from her mother-in-law, who had 6 kids.  That’s a lot of bacon to cook!  Instead of standing over a hot frying pan, burning small batches while you try to make pancakes, is a tough deal, and pretty messy too!  You can cook a whole pound of bacon at once, with this brilliant method!  All of the bacon comes out uniformly crisp, while not frying in the fat, you don’t even need paper towels!  Yes, it is perfect bacon!

Preheat the oven to 400F.

Now, you either need a broiling pan with a rack (they used to come free with new ovens!) or a cookie sheet with a wire rack set inside.  You can line the pan with aluminum foil, or not, just depends on how much clean-up you feel like doing.  It really isn’t too bad of a mess.  Broiler pans will usually hold more bacon and are sturdier when lifting out of the oven, be careful handling all that hot grease!

All you do is lay the bacon out on the rack, and put it in the oven.  Depending on how thick the bacon is sliced, it should take 20-25 minutes.  Flip the bacon about half way through, and keep an eye on it the last few minutes.  You’re done!

To make this a really special breakfast, throw a Dutch Baby Pancake in the oven at the same time, and snuggle on the couch while breakfast cooks itself!
